Située à Meudon-la-Forêt, l’École Ducasse – Paris Campus est un établissement dédié à l’excellence gastronomique. L’architecture du bâtiment est inspirée de la nature. La composition du volume est articulée autour de 4 blocs faisant écho aux 4 éléments (eau, feu, terre et air), étroitement liés aux arts culinaires, et liés entre eux par un "vide" (cinquième élément), véritable rue intérieure propice aux échanges.
Located in Meudon-la-Forêt, École Ducasse - Paris Campus is an new center dedicated to gastronomic excellence. The architecture is inspired by nature, with the four building entities symbolising the four elements, water, fire, earth and air, strongly associated with the culinary arts, and linked together by the fifth element, the ether. This is represented by an internal street connecting the four blocks, providing a place for social interaction.
Situato a Meudon-la-Forêt, l’École Ducasse - Paris Campus è una struttura dedicata all'eccellenza gastronomica. L'architettura dell'edificio si ispira alla natura. La composizione del volume si articola su 4 blocchi che richiamano i 4 elementi (acqua, fuoco, terra e aria), strettamente legati all'arte culinaria, e collegati tra loro da un “vuoto" (quinto elemento), vera e propria strada interna, luogo di scambio e relazione.
Les façades ont été volontairement creusées, comme sculptées par le phénomène naturel de l’érosion. La façade principale est dominée par le restaurant, véritable proue du bâtiment et vitrine du savoir-faire d’Alain Ducasse. Le revêtement, principalement minéral, est de teinte sombre sur le socle en béton, inspirant solidité et stabilité. La partie supérieure, symbolisant la pratique, est plus légère et sensible. Ces façades en encorbellement comme sculptées par l’érosion, sont habillées d’une peau fine en aluminium composite de teinte claire et lumineuse, modulée par des ondes composées de panneaux cintrés alternés à des verres plats.
The façades have been sculpted as if eroded by natural phenomena. On the main façade, the restaurant takes pride of place forming the prow of the building and showcasing the art of Alain Ducasse. The solid concrete base, clad in dark materials, symbolises the theoretical side of teaching, firmly rooted to the ground, and the upper, main portion of the building symbolises the practical aspects and experience. The use of contoured metallic cladding profiles lends a lighter and more finely detailed appearance, giving the impression of a façade sculpted by the wind, and the material makes reference to the stainless-steel environment of the kitchens. In contrast, the eroded faces are smoother in appearance and are treated in clear or translucent glass.
Le facciate sono state intenzionalmente scavate, come scolpite dal fenomeno naturale dell'erosione. La facciata principale è dominata dal ristorante, vera prua dell'edificio e vetrina del “savoir-faire” di Alain Ducasse. Il rivestimento minerale del basamento in cemento scuro trasmette forza e stabilità. La parte superiore, simbolo della pratica, è più leggera e armoniosa, rivestita da una pelle metallica incurvata, che sembra segnata dal passaggio del vento e da un rivestimento di vetro trasparente o opaco.
Organisés autour d’un espace commun en double hauteur, les différents espaces de formation pouvant accueillir jusqu’à 300 étudiants répartis sur 2 niveaux. Un espace de vente à emporter et 2 restaurants ouverts au public, également en double hauteur et identifiés par une façade entièrement vitrée, complètent les espaces de formation dédiés aux étudiants. Au sous-sol se trouvent des espaces de réception, de réserves, de stockage, de mise en place et un parking de 54 places.
The teaching areas are organised on two levels around the double-height internal street and have a capacity of 300-400 students. A take-away counter and 2 restaurants open to the public, all double-height spaces, also form part of the training department. On the lower ground floor, are situated reception rooms, storage and ancillary spaces as well as parking for 54 cars.
Organizzati attorno a uno spazio comune a doppia altezza, i vari spazi di formazione possono ospitare fino a 300 studenti distribuiti su 2 livelli. Un'area vendita take away e 2 ristoranti aperti al pubblico definiti da una facciata completamente vetrata e a doppia altezza, completano le aree formative dedicate agli studenti. Al piano seminterrato gli spazi per l'accoglienza, le riserve, il deposito, l'installazione e un parcheggio con 54 posti.
